Justin began working at Careys Manor Hotel in Brockenhurst, New Forest as a Commis chef in the main restaurant kitchen. He then went to London and worked at The Stafford Hotel and The Dukes Hotel both based in St James’ and at the time were sister hotels to The Ritz. Like the Ritz these two smaller hotels were also awarded 5 stars. The styles of cuisine were Mediterranean and traditional English.
Justin then began working for the InterContinental hotel group. He worked at The Churchill InterContiental Hotel, Portman Square under Idris Caldora, a well known chef in London and one of the few awarded the MOGB. Justin by now has risen from Junior Sous chef to Sous Chef; participating in London chef competitions he was to be awarded several gold and silver awards for his culinary skills.
Promotion was then seen to Executive Sous Chef – ultimately responsible for the running of the kitchen in the absence of the Head Chef. Idris Caldora decided to leave and Justin was to become the Exeutive Chef of this 5 star establishment.
Later on Justin would find himself sharing his hotel premises with famous Italian chef Locatelli, Justin was featured on several cooking programmes, editorials and was well respected for his cooking styles within the industry.
Louise met Justin whilst working as a part-time student waitress at Careys Manor Hotel. Having finished her studies she began working at The Dukes Hotel, St James’ Place, London W1 as hotel Secretary/Conference and Banqueting department. Following this post she worked for the Institute of Chartered Accountants of England and Wales as a Conference organiser. Then she was to work as a PA for now retired John G. Blair, a Dentist based in Harley Street. Finally she worked as a part-time PA for IBM UK based in Feltham just outside London, whilst working part-time as a child minder too.
